I was so excited when I read about Willow Bird Baking's Challenge #1 that I ran right out and bought a can of Crisco! Julie seems like a sweetie and a good baker and I like that she chose a yeast dough for the 1st challenge 'cause yeast doughs can be a challenge and I love the smell of yeast dough. The idea was to use the basic cinnamon bun dough she provided and see what new and exciting things you could come up with. The dough called for shortening and I wanted to be exact (although I did cave at the end and added an egg, hope that doesn't disqualify me).
One of my favorite things we made at the restaurant (mostly for wholesale customers) was Cinnamon Scones. Towards the end I was finding that the cinnamon chips were harder and harder to source. There must be some kind of a resurgence, maybe due to the cinnamon scones at Starbucks, because I found a bag at the market and decided to make my buns filled with apples and cinnamon chips.
Apple Cinnamon Chip Buns
Julie's basic dough plus 1 egg
1 cup melted butter
2 cups of apples in roughly 1/2 inch cubes
1/4 cup sugar
1 1/2 cups cinnamon chips
2 teaspoons cinnamon
1 1/4 cups confectioners' sugar
3 tablespoons milk
I followed the directions to the 't' just more or less changing out the coconut for apples and the almond paste for cinnamon chips and adding about 1 1/2 teaspoons of cinnamon. They were absolutely delicious, I must say. I ate two even before the glaze was set. The dough is not to sweet which is good because this filling certainly is. So, hats off to Julie and thanks for this yummy recipe! I'm definitely going to make these again.
